A banana with peanut butter and chia seeds is one of my favorite breakfasts; it only takes a couple minutes to make, but it feels like a treat. These banana bites remind me of the mini Baked By Melissa cupcakes with a tiny dollop of frosting and sprinkles, but they’re a much healthier version!
Last week I stumbled upon this unopened jar of Cookie Butter in my pantry, so I substituted my classic PB and it was delicious! If you’re in the mood for something a bit sweeter, cookie butter definitely turns this simple snack into a satisfying dessert.
This is another one of those meals (like my tomato toast) that doesn’t actually need a recipe, but here we go!
- 1 ripe banana
- 2 tablespoons cookie butter or peanut butter
- 1 tablespoon chia seeds
- Slice banana into 8 pieces
- Top each with 1/4 tbsp cookie butter or peanut butter
- Sprinkle chia seeds on top and press lightly (so they stick!)
That’s it! Both versions have around 330 calories; the peanut butter version has 7g of protein and 3g of sugar while the cookie butter has 1g of protein and 11g of sugar.
